Why brine strength matters
Fermenting chilies before turning them into hot sauce relies on salt doing two jobs at once: drawing water out of the peppers to create the brine itself, and holding back spoilage organisms while the salt-tolerant lactic-acid bacteria that produce the sauce’s tang get to work. Too little salt and the ferment is more vulnerable to unwanted mold or yeast; too much and fermentation slows to a crawl or stops.
