How to Blend Peppers to Hit a Target Scoville Number
Most hot sauce recipes don't use a single pepper. They use one for bulk and flavor and another for heat, and the finished mash lands somewhere between the two — but "somewhere between" is more precise than it sounds, and knowing exactly where it lands is what separates a sauce that hits your target on the first try from one you have to fix after the fact. It's also the difference between designing a recipe and just guessing at one: once you know how the blended number actually behaves, choosing peppers and weights becomes a deliberate way to land on a specific heat level rather than a hopeful mix-and-taste process.
The rule: weighted by weight, not by count
A pepper blend's Scoville rating isn't a simple average of the peppers in it — it's a weight-weighted average. Multiply each pepper's SHU by how much of it you're using (by weight), add those products together, then divide by the total weight of everything in the mix. A small amount of a very hot pepper barely moves a large batch of a milder one; a large amount of even a modestly hot pepper can dominate a small batch. This is exactly the math behind the site's Scoville blend calculator, and it's worth understanding directly, because it explains why "half jalapeño, half habanero by count" and "half jalapeño, half habanero by weight" can produce very different results depending on how much each individual pepper actually weighs.
Worked example: building a mild-leaning salsa
Start with 800 g of poblano (about 1,500 SHU) and add 40 g of cayenne (about 50,000 SHU). Multiply and add: (800 × 1,500) + (40 × 50,000) = 1,200,000 + 2,000,000 = 3,200,000. Divide by the total weight, 840 g, and the blend comes out to about 3,810 SHU — solidly in the "medium" band despite the cayenne being more than thirty times hotter than the poblano gram for gram. The poblano's sheer bulk keeps the blend close to its own end of the range; the cayenne nudges it up without taking over.
Add a further 10 g of habanero (about 250,000 SHU) to that same batch and the blend rises to roughly 6,706 SHU — noticeably hotter, but still comfortably inside the "medium" band. Ten grams is a small fraction of an 850 g batch, and the math shows exactly how much of a nudge that small fraction actually delivers: enough to notice, not enough to reclassify the sauce.
Worked example: pushing closer to a specific target
Say the goal is a "medium-hot" salsa in the neighborhood of 25,000 SHU — hot enough to have real presence, not so hot it stops being a salsa. Scaling up the habanero relative to the poblano gets there: 600 g of poblano (1,500 SHU) blended with 60 g of habanero (250,000 SHU) works out to (600 × 1,500) + (60 × 250,000) = 900,000 + 15,000,000 = 15,900,000, divided by 660 g total, for a blend of about 24,091 SHU — just under the target and still inside the "medium" heat band, close enough that a small taste-driven adjustment (a bit more habanero, or a splash less poblano) is all that's left to fine-tune.
The math doesn't stop at two peppers
The same weighted-sum-over-total-weight formula extends to as many peppers as a recipe calls for — there's nothing special about two. Blend 400 g of jalapeño (5,000 SHU), 400 g of poblano (1,500 SHU), and 30 g of habanero (250,000 SHU) and the total weighted contribution is (400 × 5,000) + (400 × 1,500) + (30 × 250,000) = 2,000,000 + 600,000 + 7,500,000 = 10,100,000, divided by 830 g total, for a blend of roughly 12,169 SHU — again "medium," and again a result that would be easy to misjudge by eye given how much hotter the habanero is than either of the other two peppers on its own. Three-pepper blends like this are common in practice specifically because they let you tune flavor and heat somewhat independently: the jalapeño and poblano here are doing most of the flavor work, while the small habanero addition is doing most of the heat work.
There's no practical limit to how many components a blend calculator can handle this way — a five- or six-pepper mash follows exactly the same arithmetic, just with more terms in the sum. What changes as you add more peppers isn't the math, it's how much attention each individual weight needs, since a small measuring error on one minor ingredient in a long list matters less than the same error would in a simple two-pepper blend.
It's also worth noticing what a multi-pepper blend buys you that a two-pepper one doesn't: more independent flavor layers without necessarily adding more heat. A base of two mild, flavor-different peppers (say poblano for depth and Anaheim for brightness) plus one small hot addition gives three distinct flavor contributions with the heat still concentrated in, and controlled by, just the one component doing that job. That separation of "which ingredient does what" is a big part of why experienced hot sauce recipes often read as more complicated ingredient lists than a beginner would reach for — not because more peppers means more heat, but because more peppers, chosen deliberately, means more control over flavor while heat stays a single, easily adjusted dial.
The heat bands, for context
The Scoville blend calculator classifies any result into a plain-language band, which is useful shorthand once you're past the raw number:
- No heat — 0 SHU
- Mild — under 2,500 SHU
- Medium — 2,500 to just under 30,000 SHU
- Hot — 30,000 to just under 100,000 SHU
- Very hot — 100,000 to just under 350,000 SHU
- Extreme — 350,000 SHU and up
Both worked examples above land in the "medium" band despite a fourfold difference in blended SHU between them (roughly 6,700 versus 24,000) — a reminder that the band is a rough classification for quick comparison, while the actual number is what you'd use to compare two specific recipes against each other precisely.
Order doesn't matter — proportion does
Because the formula just sums weighted contributions and divides by total weight, it doesn't matter whether you add the hot pepper first or last, or whether you blend the peppers together in one batch or stir a smaller hot component into a larger mild one afterward. What matters is the final proportion by weight. This is genuinely useful in practice: if a first taste says a batch needs more heat, you can add more of the hot pepper, reweigh the total, and recompute rather than starting over — the blend calculator handles a rebalanced batch exactly the same way it handled the original one, whether that's an adjustment made mid-recipe or a fresh calculation on a batch you're scaling up for a bigger cook.
Working backward from a target
The examples above start from a set of peppers and compute the resulting SHU. It's just as common to want the reverse: starting from a target heat level and a chosen hot pepper, and solving for exactly how much of that pepper to add to a known amount of everything else. A practical checklist
- Weigh everything. "Two peppers" means nothing for this math without a weight attached to each — a single habanero can weigh anywhere from a few grams to well over ten.
- Pick one SHU figure per pepper and stick with it. Use the midpoint from the pepper reference table unless you have a specific reason to lean toward one end of a variety's range.
- Be consistent about seeds and pith. Since most of a pepper's capsaicin concentrates there, a batch made with seeds and pith left in runs hotter than the same weight of pepper with them removed, even though the calculator has no way to know which you did unless you account for it in the SHU figure you use.
- Taste before declaring it final. The arithmetic is exact given the inputs; the inputs (each pepper's real SHU) are themselves an estimate, so treat the computed result as a strong starting point to confirm by tasting, not a guaranteed outcome.
Mistakes that throw the math off
The formula itself doesn't fail — bad inputs do. The most common one is measuring peppers by count instead of weight: "two jalapeños and one habanero" tells the calculator nothing useful, because a jalapeño can weigh anywhere from around 10 g to over 20 g depending on size, and that variation alone can shift a blend's real SHU by a meaningful margin. A close second is inconsistency about seeds and pith — using an SHU figure that assumes pith is removed while actually leaving it in (or the reverse) means the number going into the calculation doesn't match what's actually going into the pot. A third is switching pepper varieties mid-recipe without updating the SHU figure — swapping a milder batch of jalapeños for a hotter one and continuing to use the old reference number will make the calculator's output wrong in a way that has nothing to do with the arithmetic itself.
