Most hot sauce recipes are written for a fixed batch size and a specific pepper, which makes them awkward to adapt — double the batch and you need to double the pepper too, but swap in a hotter variety and suddenly the old ratio is far too aggressive. This calculator works from the underlying dilution math instead of a fixed recipe: tell it your target heat and the pepper you actually have, and it solves for the mass that gets you there.
It's the same relationship used by the Scoville Blend Calculator, just solved in the other direction — instead of finding the heat of a known mix, this finds the pepper amount for a heat you choose.
Frequently Asked Questions
What counts as "everything else" in the batch?
Anything in the final sauce that isn't the pepper itself — vinegar, water, garlic, onion, fruit, salt, and any other ingredients. The calculator treats the pepper as the only source of Scoville heat and dilutes it into that total.
How is the pepper amount calculated?
The blended heat of a sauce is the pepper's SHU times the pepper's share of the total weight. Setting that equal to your target SHU and solving for the pepper weight gives: pepper mass = target SHU × other-ingredients weight ÷ (pepper SHU − target SHU). The tool does that algebra for you.
Why do I get an error when my target is too high?
The target SHU has to be lower than the pepper's own SHU — you can't dilute a pepper up past its own heat. If your target is close to the pepper's rating, the required pepper mass grows very large (you're using almost nothing but pepper), so pick a hotter pepper if a target keeps producing an unreasonable result.
