Why the math works this way
Drying doesn’t remove any of a pepper’s solid material — it only removes water. That makes the “dry matter” of the pepper (everything that isn’t water) the fixed point to calculate from: whatever weight of dry matter you start with is the same weight of dry matter you end with, just now making up a much larger share of a much smaller total.
That’s why a batch that starts near 90% water can shrink to roughly a tenth of its fresh weight once it’s properly dried — a useful number to know before you plan how many peppers to buy or grow for a given amount of finished chili flakes or powder.

Why does drying remove so much weight?
Fresh chilies are mostly water — commonly in the 75-90% range depending on the variety — so once that water evaporates, what's left is a much smaller amount of fiber, sugars, and capsaicinoids. Losing 85-90% of the starting weight during drying is normal for chilies, not a sign anything went wrong.
How is the dried weight calculated?
It assumes the dry matter in the pepper (everything except water) stays the same before and after drying — only the water changes. If a fresh pepper is 88% water, its dry matter is the remaining 12% of the starting weight; dividing that same dry-matter amount by the dry-matter share of the target moisture (say 90% once it's down to 10% moisture) gives the finished weight.
What target moisture should I use?
Shelf-stable dried chilies are typically brought down to roughly 8-12% moisture. Going much wetter risks mold in storage; the exact target depends on your drying method and how you plan to store the peppers.
