ROOH Progressive Indian and Alora restaurants are the brainchild of Vikram and Anu Bhambri, a husband-and-wife duo who have been working tirelessly to change the perception of Indian food in America. Their journey began several years ago, when they realized that Indian cuisine was often misunderstood and misrepresented in the US.

They discovered the unique flavors and ingredients of the southern region, the spicy flavors of the north, and the delicate flavors of the east. They learned about the various cooking techniques, such as tandoori cooking and biryani-making. Through their journey, the Bhambris gained a deeper understanding of Indian cuisine and its cultural significance.

    Dishes at Fitoor that highlight that goal include the hefty Lamb Shank Rogan Josh, made with pickled onions, greens and served in its red broth. It’s a traditional dish from Kashmir. “The shank is very tender, it looks really spicy but it’s not very spicy,” Vikram Bhambri said. “You are basically tasting a piece of Kashmir when you bite into this dish. It’s got warmth, it’s very flavorful with the combination of the lamb meat and sauce. The first impression is just an explosion of flavors in your mouth,” he added. They also take inspiration from Indian street food with dishes like the Bombay Papdi Bhel.
